Adjaruli khachapuri (Georgian bread)

Ingredients

For the bread

  • 275g/10oz plain flour, plus extra for dusting
  • 1 tbsp olive oil
  • 1 tsp salt
  • 7g fast-action yeast
  • ½ tsp caster sugar
  • 200–300ml/7–10fl oz tepid water
  • 2 tbsp chopped fresh parsley, to serve

For the meat filling

  • 1 tbsp sunflower oil
  • 200g/7oz lamb mince
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 tsp ground coriander
  • ½ tsp chilli powder
  • 1 tbsp tomato purée
  • ½ tbsp chopped fresh coriander
  • ½ tbsp chopped fresh mint
  • 25g/1oz unsalted butter, melted

For the spinach, cheese and walnut filling

  • 2 handfuls of spinach
  • 100g/3½oz walnuts
  • 200g/7oz mozzarella, torn
  • 175g/6oz feta, crumbled
  • 2 free-range eggs
