INGREDIENTS

  • Self-raising flour : 225g / 8oz
  • Salt : ½ tsp
  • Mustard powder : ½ tsp
  • Cayenne powder : ¼ tsp
  • Baking powder : 1 tsp
  • Butter : 25g / 1oz
  • Mature cheddar cheese, grated : 150g / 5oz
  • Large egg : 1
  • Milk : as needed

METHOD

  1. Prepare the oven and baking tray:
    • Preheat your oven to 220°C (200°C for fan ovens) or Gas Mark 7.
    • Lightly grease a baking tray to prevent the scones from sticking.
  2. Mix the dry ingredients:
    • In a large mixing bowl, combine the self-raising flour, salt, mustard powder, cayenne pepper, and baking powder.
    • Whisk these ingredients together to ensure they’re evenly distributed.
  3. Incorporate the butter:
    • Add the butter to the dry mixture.
    • Using your fingertips, rub the butter into the flour mixture until it resembles fine breadcrumbs. This creates a light, flaky texture in the scones.
  4. Add the cheese:
    • Stir in 100g (about two-thirds) of the grated cheddar cheese, reserving the rest for topping.
  5. Prepare the wet ingredients:
    • In a measuring jug, crack the egg.
    • Add milk until the liquid reaches the ¼ pint mark.
    • Whisk the egg and milk together until well combined.
  6. Form the dough:
    • Gradually add the milk mixture to the dry ingredients, stirring until you have a soft dough. It should not be sticky.
    • If the dough seems too dry, add a little more milk. If it’s too wet, add a sprinkle of flour.
  7. Shape the scones:
    • Turn the dough out onto a lightly floured surface.
    • Knead it gently a few times to bring it together.
    • Roll the dough out to a circle about 5-6 inches in diameter and about 2cm thick.
  8. Cut and prepare the scones:
    • Using a circular cookie cutter, cut out rounds from the dough.
    • Place the rounds on your prepared baking tray.
    • Lightly brush the top of each scone with a little milk.
    • Sprinkle the remaining grated cheese over the tops.
  9. Bake the scones:
    • Place the tray in the preheated oven.
    • Bake for approximately 15 minutes, or until the scones are golden brown on top.
  10. Cool and serve:
    • Once baked, carefully transfer the scones to a wire rack to cool.
    • For the best flavor and texture, serve the scones as fresh as possible.
