Zesty Rioja Rosado Perfects Salmon Tacos
Helen McGinn, Saturday Kitchen’s wine maestro, selects the Baron Amarillo Rioja Rosado 2024 from Spain to elevate Sam Holland’s vibrant Salmon Tacos. The magic lies in this rosé’s crisp acidity and strawberry freshness, mirroring the dish’s smoky fish and lime zing for a seamless coastal harmony.
The Wine: Rioja’s Vibrant Pink
Hailing from Spain’s Rioja region, this 2024 rosado blends Tempranillo and Garnacha grapes from high-altitude vineyards, vinified with brief skin contact for a pale, salmon-hued stunner. Cool fermentation preserves its lively profile of ripe strawberries, watermelon, citrus peel, and subtle herbal notes, underpinned by bright acidity and a dry, refreshing finish. From Aldi at a great price it’s an everyday luxury bursting with summer appeal.
“We’ve gone for a rosé, but from Rioja, which you’d normally think about red wine from Rioja, but they make some really lovely rosés. They’ve got the red grapes there, so this is made mostly from the Tempranillo grape, which is the main grape behind Rioja. Rioja rosés used to be much darker in colour but they’ve gone a bit paler, obviously because they’ve seen what’s happening in Provence and we all love a pale pink wine now. You get lots of fruit and freshness, which is what you need with all the lovely fresh flavours going on in the tacos. So just a very different take on rosé.” (Helen)
Why It Complements the Dish
Pairing science reveals why this duo sings through targeted synergies.
Handling the Main Protein/Texture: The wine’s lithe structure and gentle tannins embrace the salmon’s oily, flaky texture, binding proteins for a silky mouthfeel that enhances each taco bite.
Cutting Richness/Sauce: Razor-sharp acidity slices through the smoked salmon’s natural fats and creamy avocado or salsa elements, dissolving lipids to refresh the palate instantly.
Complementing Secondary Flavours: Red berry aromatics align with lime, coriander, and chilli accents, amplifying shared volatile compounds for explosive flavour unity.
