Ingredients
For the fish
- 4 tbsp lime pickle, finely chopped
- 2 tbsp Greek yoghurt
- 1 tsp fresh ginger, grated

- 1 lime, juice only
- ½ tsp ground cumin
- 1 pinch ground turmeric
- 1 whole sea bass or sea bream, scaled and gutted
For the stuffing
- 10g/⅓oz fresh coriander
- 10g/⅓oz fresh mint
- 1 lime, sliced
- 1 small green bird’s-eye chilli, chopped
- 2cm/¾in piece fresh ginger, peeled and sliced
For the mint yoghurt
- 3 tbsp Greek yoghurt
- 1 garlic clove, finely chopped
- 1 tbsp fresh mint, finely chopped
For the cucumber and red onion salad
- ½ cucumber, chopped
- ½ red onion, chopped
- 1 tsp black mustard seeds, toasted
- ½ tsp cumin seeds, toasted
- 1 tbsp salted cashews, toasted and chopped

Customise

Method
- Make the marinade (10 mins + 1 hr marinating)
Mix the lime pickle, Greek yoghurt, grated ginger, garlic, honey, lime juice, cumin and turmeric in a bowl until well combined. Slash the fish deeply three times on each side to help the marinade penetrate. Rub the marinade all over the fish and into the slashes, ensuring even coverage. Cover and marinate in the fridge for 1 hour to develop those bold, aromatic flavours. - Prepare the mint yoghurt (5 mins)
Mix the Greek yoghurt, finely chopped garlic and mint in a bowl. Season with salt and pepper to taste. Chill until ready to serve, allowing the flavours to meld while you prepare the rest of the barbecued sea bass dish. - Make the cucumber salad (5 mins)
Combine the chopped cucumber, red onion, toasted mustard seeds, cumin seeds and cashews in a bowl. Add a pinch of salt and freshly ground black pepper. Toss gently and set aside at room temperature until serving time. - Stuff the fish cavity (5 mins)
