Burnt pineapple hot sauce with chicken wings

Ingredients

For the hot sauce:

  • Pineapple: 1, skinned, cored and cut into quarters
  • Scotch bonnet chillies: 5, stalk removed and left whole
  • Onion: 1, quartered
  • Garlic cloves: 3, left whole
  • Ground allspice: 1 tsp
  • Thyme: 1 tbsp, chopped
  • Vegetable oil: 4 tbsp
  • Brown sugar: 80g/2¾oz
  • White wine vinegar or cider vinegar: 125ml/4fl oz
  • Salt and freshly ground black pepper: to taste

For the chicken wings:

  • Chicken stock: 500ml/18fl oz
  • Chicken wings: 12
  • Dried thyme: 2 tsp
  • Ground cumin: 2 tsp
  • Smoked paprika: 2 tsp
  • Garlic powder: 2 tsp
  • Onion powder: 2 tsp
  • Vegetable oil: 2 tbsp

Method

Prepare the hot sauce

  • Preheat the oven to 250C/230C Fan/Gas 9 or as high as it will go.
  • In a roasting tin, combine pineapple, Scotch bonnet chillies, onion, garlic, allspice, and thyme.
  • Toss with a little oil and season with salt and pepper.
  • Roast for about 30 minutes until ingredients are charred and blistered.
  • Stir in sugar and vinegar, then blend in a food processor to a purée.
  • Adjust consistency if needed by heating to thicken or adding warm water to thin.

Cook the chicken wings

  • In a large saucepan, heat the chicken stock and poach the wings for 30 minutes over low heat.
  • Remove wings and let cool to firm up.

Season and chargrill the wings

  • Mix thyme, cumin, smoked paprika, garlic powder, and onion powder in a large bowl.
  • Toss cooled wings in the spice mixture to coat.
  • Heat a frying pan over high heat with a little oil.
  • Chargrill the wings all over to blister and heat through.

Serve

  • Serve the chargrilled chicken wings with the pineapple hot sauce on the side.
