Khachapuri is a traditional Georgian dish of cheese-filled bread. The bread is leavened and allowed to rise, molded into various shapes, and then filled in the center with a mixture of cheese, eggs, and other ingredients

Ingredients

For the dough

  • 900g/2lb ‘00’ flour
  • 25g/1oz fresh yeast or 7g fast action dried yeast
  • 15g/½oz salt

For the topping

  • 2 balls mozzarella, drained and chopped, plus handful grated mozzarella
  • 200g/7oz ricotta
  • 200g/7oz feta
  • 100g/3½oz grated mozzarella

To serve

  • 1 free-range egg yolk
  • 25g/1oz unsalted butter, cut into pieces
  • handful fresh flatleaf parsley, chopped
  • 1 tbsp chopped fresh dill
  • 1 tsp smoked paprika
