Ingredients
- 1kg/2lb 4oz chicken wings (drum and flat only, tips removed)
- 2 tbsp crushed fresh root ginger
- 1 tbsp crushed garlic
- ½ tbsp ground turmeric
- 1 tbsp fenugreek
- 2 tbsp Kashmiri chilli powder
- 2 tsp garam masala
- 200ml/7fl oz thick Greek-style yoghurt
- 2 lemons, juice only
- 2 tbsp chopped fresh coriander (for wings garnish)
- 2 sliced crisp fried red chillies (for wings garnish)
- 4 crisp fried garlic cloves (for wings garnish)
- 3 thinly sliced and crisp fried okra (for wings garnish)
- Packet of sev (for wings garnish)
- 10 dried Kashmiri red chillies, stems removed (for chilli chutney)
- 6 whole garlic cloves, peeled (for chilli chutney)
- 1 tbsp oil (for chilli chutney)

- 2 potatoes, skins on
- 2 tbsp vegetable oil, to fry
- 2 tbsp debai marsala
- 100g/3½oz chickpeas
- 2 tbsp tamarind sauce
- ½ red onion, chopped
- 1 tbsp chopped fresh coriander
- 20g/¾oz Bombay mix
- 20g/¾oz puffed rice
- 40g/1½oz pomegranate seeds
- 1 lime, juice only
- 2 tbsp pomegranate seeds (for garnish)
- 1 tbsp fresh chopped coriander (for garnish)
Method
- In a large bowl, combine crushed ginger, crushed garlic, turmeric, fenugreek, Kashmiri chilli powder, garam masala, Greek-style yoghurt, and lemon juice. Add the chicken wings and marinate in the fridge for at least 2 hours or overnight.
- Preheat the oven to 200C/180C Fan/Gas 6. Arrange the marinated wings on a lined baking tray and bake for 30–40 minutes until crisp and golden.
- For the wings garnish, mix chopped coriander, crisp fried red chillies, crisp fried garlic cloves, crisp fried okra, and sev. Sprinkle over the hot wings.
- For the chilli chutney, soak dried Kashmiri red chillies in just-boiled water to soften. Drain, then blend with garlic cloves, oil, and salt to a smooth paste.
- For the bhel puri potato skins, preheat the oven to 200C/180C Fan/Gas 6. Mix vegetable oil and debai marsala, rub over the potatoes, and bake for 50–60 minutes until tender.
- Once cool enough to handle, halve the potatoes and scoop out the flesh, keeping the skins intact. Mash the potato and combine with chickpeas, tamarind sauce, red onion, chopped coriander, Bombay mix, puffed rice, pomegranate seeds, and lime juice. Fill the skins with the mixture and return to the oven for 15–20 minutes.
- Spoon the chilli chutney onto a serving plate and top with the hot potato skins. Garnish with pomegranate seeds and fresh coriander.
- Serve the bhel puri potato skins alongside the spiced chicken wings for a vibrant sharing platter.
