Ingredients
For the beef:
- Rib-eye steak, sliced: 250g/9oz
- Jerk seasoning: 1–2 tbsp
- Smoked paprika: 2 tsp
- Onion powder: 1 tbsp
For the stir fry:
- Olive oil: 1 tbsp
- Red onion, chopped: 1
- Red pepper, sliced into strips: ½
- Green pepper, sliced into strips: ½
- Yellow pepper, sliced into strips: ½
- Scotch bonnet chilli (small piece): 1
- Garlic cloves, chopped: 3
- Fresh root ginger, chopped: 1 tbsp
- Fresh thyme, chopped: ½ tbsp
- Honey: 2 tbsp
- Tomato ketchup: 1 tbsp
- Worcestershire sauce: 1 tbsp
- Cooked rice (to serve)
For the green seasoning:
- Fresh coriander (½ bunch)
- Fresh parsley (½ bunch)
- Fresh chives (½ bunch)
- Garlic cloves, peeled: 3
- Vegetable oil: 2 tbsp
- Green chillies, chopped: 2
- Spring onions, chopped: 1 bunch
- Green pepper, deseeded and chopped: 1
- Lime juice: 2 limes
- Freshly ground black pepper: 1 tsp
Method
- Marinate the Beef:
- Toss the beef slices and seasoning ingredients in a large bowl.
- Set aside for a few hours or overnight.
- Cook the Beef:
- Heat a large frying pan over high heat.
- Add olive oil and, once hot, place the marinated beef into the pan.
- Fry for 2–3 minutes to cook the outside.
- Remove the beef from the pan and set it aside.
- Prepare the Vegetables:
- Discard the oil from the pan.
- Add red onion, peppers, and scotch bonnet chilli.
- Sauté for 15 minutes until soft.
- Make the Green Seasoning:
- Blend all green seasoning ingredients (coriander, parsley, chives, garlic, oil, chillies, spring onions, green pepper, lime juice, and black pepper) until smooth.
- Set aside.
- Combine Everything:
- When the veggies are soft, add garlic, ginger, thyme, and 4 tablespoons of the green seasoning to the pan.
- Stir in honey, ketchup, Worcestershire sauce, and the cooked beef.
- Check the seasoning and serve with cooked rice.
