Ingredients

For the peanut butter cookies

  • crunchy peanut butter 200g/7oz
  • free-range egg 1
  • soft light brown sugar 180g/6oz
  • salt ½ tsp

For the salted caramel chocolate sauce

  • caster sugar 300g/10½oz
  • salted butter 150g/5½oz
  • double cream 300ml/10fl oz
  • dark chocolate 150g/5½oz, broken into pieces

  • vanilla ice cream sliced to cookie size

Method

  1. Prepare the cookies: Preheat the oven to 200C/180C Fan/Gas 6. Line a baking tray with baking paper.
  2. In a mixing bowl, combine the peanut butter, egg, soft light brown sugar and salt using a wooden spoon. Roll the mixture into golf ball-sized portions.
  3. Place the cookie balls onto the prepared tray, leaving space between them. Bake for about 12 minutes, then cool on a wire rack.
  4. Make the caramel chocolate sauce: Heat a saucepan over medium-high heat. Add the sugar in an even layer and allow the edges to melt. Do not stir until it starts to caramelise.
  5. Once the sugar begins to turn golden and dissolve, gently stir with a spatula. Carefully add the butter and cream, then stir in the chocolate pieces until fully melted and smooth.
  6. Assemble the ice cream sandwiches: Spoon a little of the chocolate caramel sauce onto the flat side of two cookies. Add a slice of vanilla ice cream, then sandwich together. Repeat for all cookies.
