Roasted halibut with Brazilian-style lime dressing

Ingredients

  • 2 tbsp vegetable oil
  • two halibut fillets(250g/9oz each)
  • 40g/1½oz unsalted butter
  • 3–4 limes, juice only

For the Brazilian-style lime dressing

  • 2 tbsp vegetable oil
  • 1 banana shallot, diced
  • 1 tsp fresh ginger, chopped
  • 3 garlic cloves, finely chopped
  • 2 hot green chillies, chopped
  • 100ml/3½fl oz double cream
  • 100ml/3½fl oz coconut milk
  • ½ tsp palm sugar
  • 1 tsp cornflour
  • 1 tbsp fresh chives, chopped

To serve

  • 6 small spears purple-sprouting broccoli
