Ingredients

For the stock and the chicken

  • 500ml/18fl oz chicken stock
  • 50g/1¾oz smoked bacon trimmings
  • 3 smoked chicken thighs or breasts, cut into pieces
  • shells from the prawns (see below)
  • 3 garlic cloves
  • 1 bay leaf
  • 1 bunch fresh thyme

For the gumbo

  • 2 dried ancho peppers
  • 30g/1oz pork fat or lard
  • 100g/3½oz smoked bacon, diced
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 celery sticks, finely chopped
  • 1 green pepper, finely chopped
  • 4 tbsp plain flour
  • 8 raw king prawns in shell, shell removed (see above)
  • 4 large spring green leaves, shredded
  • 1 bunch chives, thinly sliced
  • cooked red rice, to serve
  • trimmed chives, to serve
