Tuna steak, orange and potato salad

Ingredients

  • 2 tbsp golden raisins
  • 200ml/7fl oz orange juice
  • 1 large orange, pared zest only
  • 1 jalapeño chilli, chopped
  • 2 tbsp balsamic vinegar
  • 2 red onions, cut into thick rings
  • 1 handful Jersey Royal potatoes, scrubbed well and cooked
  • 4 tbsp olive oil, plus extra for brushing
  • 2 x 200g/7oz tuna steaks
  • 1 large handful fresh flatleaf parsley, roughly chopped
  • 1 Little Gem lettuce, leaves separated

For the aïoli

  • 2 free-range egg yolks, beaten
  • 100–200ml/3½–7fl oz light olive oil
  • 3 garlic cloves, finely chopped
  • 1 lemon, juice only
  • salt and freshly ground black pepper
