Method
- Place the semi-defrosted strawberries into a large mixing bowl. Pour over the maple syrup and mash using a potato masher until the berries release their juice.
- Add the kiwi, pineapple, chia seeds, lime juice, and rosewater. Continue to mash gently until the fruit breaks down slightly and combines into a syrupy mixture.
- Begin assembling the parfait by layering a spoonful of the fruit mixture in the base of each glass. Add a layer of crushed ice, followed by a spoonful of soured cream or kefir yoghurt.
- Repeat the layering process twice more, creating three layers of fruit, ice, and cream in total.
