  • frozen strawberries 200g, semi-defrosted

  • tinned pineapple chunks 150g, in juice
  • chia seeds 1 tsp
  • lime juice of 1
  • rosewater 2 tsp
  • crushed ice 6 tbsp
  • soured cream or kefir yoghurt 300g
  • chopped pistachios 2 tbsp

Method

  1. Place the semi-defrosted strawberries into a large mixing bowl. Pour over the maple syrup and mash using a potato masher until the berries release their juice.
  2. Add the kiwi, pineapple, chia seeds, lime juice, and rosewater. Continue to mash gently until the fruit breaks down slightly and combines into a syrupy mixture.
  3. Begin assembling the parfait by layering a spoonful of the fruit mixture in the base of each glass. Add a layer of crushed ice, followed by a spoonful of soured cream or kefir yoghurt.
  4. Repeat the layering process twice more, creating three layers of fruit, ice, and cream in total.
  5. Finish with a sprinkling of chopped pistachios on top and serve immediately to enjoy the icy freshness.
