  • Cod fillets – 2 (285g/10¼oz each), cut into chunks
  • Oil – 2 tsp, plus extra for frying

  • Spring onions – 4, trimmed and sliced into long thin 5cm/2inch strips
  • Fresh coriander leaves – chopped, to garnish
  • White rice – freshly cooked, to serve

Method

Prepare the Soup

  • Place the carrot soup in a saucepan over medium heat.
  • Allow it to bubble and reduce while you prepare the cod.

Prepare the Cod

  • In a bowl, combine the cod chunks with oil, salt, and chilli powder.
  • Add the spring onions and mix until the fish and vegetables are evenly coated.

Cook the Cod and Spring Onions

  • Heat some oil in a non-stick frying pan over medium heat.
  • Cook the cod chunks and spring onions in batches, ensuring the pan is not overcrowded, until golden.

Combine and Cook

  • Add the cooked cod and spring onions to the reduced carrot soup.
  • Carefully mix and cover, cooking for 20 minutes.
  • As the curry cooks, the cod will flake, which is desired.

Serve

  • Serve the cod in bowls, garnished with chopped coriander.
  • Accompany with freshly cooked white rice.
