For the marinade

  • Garlic cloves, grated: 4
  • Fresh root ginger, grated: 2.5cm/1in piece
  • Chinese five-spice powder: 2 tsp
  • Dried chilli flakes: ⅓ tsp
  • Light soy sauce: 2 tsp
  • Rice wine vinegar: 2 tsp
  • Ground black pepper: ½ tsp
  • Fine sea salt: ¼ tsp
  • Olive oil: 1 tsp

For the hoisin duck ‘sausage’ rolls

  • Duck legs: 2 (440g/15½oz)
  • Spring onions, finely sliced: 4
  • Pancetta, diced: 100g/3½oz
  • Ready-rolled puff pastry: 320g
  • Free-range egg, beaten: 1
  • Black sesame seeds, to garnish: 20g/¾oz

For the hoisin sauce

  • Dark soy sauce: 1 tbsp
  • Light soy sauce: 2 tbsp
  • Plum sauce: 2 tbsp
  • Rice wine vinegar: 2 tsp
  • Sesame oil: 2 tsp
  • Smooth peanut butter: 2 tbsp
  • Dark brown sugar: 1 tbsp
  • Garlic powder: 1 tsp
  • Dried red chilli flakes: ½ tsp
  • Ground black pepper: pinch

Method

1. Marinate the Duck

  • Mix all marinade ingredients in a bowl.
  • Score the duck skin diagonally and rub the marinade all over, including into the scored lines.
  • Optional: Marinate the duck for a few hours for deeper flavor.
  • Preheat the oven to 190C/170C Fan/Gas 5 and roast the duck for 45 minutes.

2. Prepare the Duck Filling

  • Increase the oven temperature to 220C/200C Fan/Gas 7 after removing the duck.
  • Shred the duck meat, skin, and fat using two forks. It’s fine if the meat is slightly pink as it will cook further.
  • In a food processor, pulse the shredded duck, spring onions, and pancetta to a sausage-like consistency.
  • Mix 4 tablespoons of hoisin sauce into the duck mixture and set aside.

3. Make the Hoisin Sauce

  • Combine all sauce ingredients in a bowl and mix until smooth.

4. Assemble the Rolls

  • Cut puff pastry into four strips (26x9cm/10½x3½in).
  • Spread ½ tablespoon of hoisin sauce on each strip and add the duck mixture along the center.
  • Fold the pastry lengthwise over the filling, seal the edges with a fork, and cut each strip into 8 pieces.
  • Brush with beaten egg, sprinkle sesame seeds, and chill in the freezer for 10 minutes if the pastry is soft.

5. Bake

  • Bake rolls on a parchment-lined tray for 20–25 minutes until golden and puffed.
  • Serve with remaining hoisin sauce.
