Ingredients

  • 200g/7oz unsalted butter, softened, plus extra for greasing
  • 150g/5½oz light brown soft sugar
  • 75g/2¾oz dark brown soft sugar
  • 2 free-range eggs
  • 2 tsp vanilla paste
  • 275g/9¾oz plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 100g/3½oz chocolate sandwich cookies (such as Oreos), roughly chopped
  • 75g/2½oz milk chocolate chips

Customise

  • Replace milk chocolate chips with dark or white chocolate for variation
  • Add a pinch of sea salt on top for a salted chocolate twist
  • Use gluten-free plain flour for a gluten-free version
  • Add a handful of chopped nuts for extra texture
  • Serve with frozen berries or raspberry coulis for added freshness

Method

  1. Preheat Oven and Prepare Skillet

Heat the oven to 200C/180C Fan/Gas 6. Grease your 25cm ovenproof skillet well with butter and set aside.

  2. Mix Butter and Sugars

In a large bowl, beat the softened butter with both sugars until light and fluffy.

  3. Add Eggs and Vanilla

Beat in the eggs one at a time, mixing thoroughly between each addition. Stir in the vanilla paste.

  4. Combine Dry Ingredients

Fold in the plain flour, baking powder, and salt just until combined. Avoid overmixing.

  5. Add Chocolate Pieces

Gently stir in the chopped chocolate sandwich cookies and milk chocolate chips until evenly spread through the dough.

  6. Bake

Spoon the dough evenly into the prepared skillet, pressing it down gently. Bake for 20–25 minutes until the top is golden, but the centre remains gooey.

  7. Cool and Serve

Let the cookie cool in the skillet for 5 minutes before serving warm with vanilla ice cream and chocolate sauce for an indulgent finish.
