Baked sea bream with garlic prawns

For the herb oil

  • 150ml/5fl oz olive oil
  • 2–3 rosemary sprigs, roughly chopped
  • 2–3 thyme sprigs, roughly chopped
  • 2–3 sage sprigs, roughly chopped
  • 2–3 garlic cloves, thinly sliced

For the baked sea bream

  • 2 whole sea bream, scaled and gutted (about 400g/14oz each)
  • 1 lemon, thinly sliced, plus lemon wedges
  • sea salt and freshly ground black pepper
  • asparagus, griddled, to serve

For the garlic prawns

  • 150ml/5fl oz olive oil
  • 4 garlic cloves, very finely chopped
  • 3 tbsp very finely chopped parsley leaves
  • generous pinch chilli flakes
  • 600g/1lb 5oz whole king prawns, peeled and deveined, tail tip and head left on
