Ingredients

For the shortcrust pastry:

  • Plain flour 175g (6oz)
  • Butter 75g (3oz)

For the sponge mixture:

  • Butter, softened 100g (4oz)
  • Caster sugar 100g (4oz)
  • Self-raising flour 175g (6oz)
  • Baking powder 1 level tsp
  • Large eggs 2
  • Milk 2 tbsp
  • Almond extract ½ tsp

To finish:

  • Raspberry jam About 4 tbsp
  • Flaked almonds, for sprinkling

Method

Prepare the Pastry

  • Measure the flour into a bowl.
  • Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
  • Add 2–3 tablespoons of cold water gradually, mixing to form a soft dough.
  • Roll out the dough on a lightly floured surface and use it to line the traybake tin.

Make the Sponge Mixture

  • Preheat the oven to 180°C/fan 160°C/gas 4.
  • In a bowl, measure all sponge ingredients and beat until well blended.

Assemble and Bake

  • Spread the pastry base with raspberry jam.
  • Pour the sponge mixture over the jam and sprinkle with flaked almonds.
  • Bake in the preheated oven for about 25 minutes or until golden brown and springy to touch.
  • Allow to cool in the tin before cutting into slices.
