- Tortilla wrap 1 large
- Vegetable oil for frying
- Onion 1, finely chopped
- Chestnut mushrooms 250g/9oz, sliced
- Eggs 3 large
- Double cream 150ml/5fl oz
- Cheddar cheese 75g/2½oz, grated
- Parsley 2 tbsp, chopped
- Salt and pepper to taste

Prepare
- Preheat oven to 200C/180C Fan/Gas 6
- Preheat a large baking tray in the oven
- Brush a 20cm/8in loose-bottomed sandwich tin with oil
- Place wrap inside tin, covering base and halfway up sides
Cook Filling
- Heat oil in a large lidded frying pan over medium heat
- Fry onion for a few minutes, then cover and cook for 10 minutes until soft
- Add mushrooms and fry for a few minutes
- Spoon mushroom mixture into wrap-lined tin and spread evenly
Prepare Egg Mixture
- Beat eggs and cream together in a small bowl
- Season with salt and pepper
- Add half the cheese and parsley to egg mixture
- Pour over mushroom filling
- Top with remaining cheese
Bake
- Place tin on preheated baking tray in oven
- Cook for 25-30 minutes until set and lightly golden
- Leave to stand for 5 minutes
- Cut into wedges and serve hot with dressed tomato salad
