Nutri-Score C
This dish scores a C on the Nutri-Scale, balancing protein from chorizo with the antioxidants in garlic and parsley. The cider reduces to a concentrated sauce, while olive oil provides heart-healthy fats.

Equipment

Ingredients

  • olive oil 2 tbsp
  • cooking chorizo 2 (fresh, not cured), sliced
  • garlic cloves 2, smashed
  • dry cider 250ml
  • bay leaf 1
  • fresh parsley 1 tbsp, chopped
  • salt to taste

Method

  1. Heat oil in a frying pan over medium heat. Add chorizo slices and fry for 3-4 minutes per side until crisp and releasing red oils.
  2. Add smashed garlic and cook for 2 minutes until fragrant, stirring with a wooden spoon.
  3. Pour in cider and add bay leaf. Simmer gently for 15-20 minutes until the liquid reduces to a sticky glaze.
  4. Season with salt, stir through parsley, and serve immediately with bread to soak up the sauce.

Suggested Wine Pairing

Majestic: Burgáns Albariño

A crisp Spanish white with apple and citrus notes that cut through the chorizo’s richness, while its minerality complements the cider sauce.

Tesco: Finest Txakoli

This slightly sparkling Basque wine has bracing acidity that cleanses the palate between bites of spicy chorizo.

Sainsbury’s: Taste the Difference Verdejo

Herbal and citrusy, this Rueda white balances the dish’s smokiness while its acidity matches the cider’s tang.

What can you serve with this

  1. Crusty baguette – Essential for scooping up every last bit of the delicious cider sauce.
  2. Patatas bravas – Crispy potatoes make a perfect textural contrast.
  3. Manchego cheese – Its nutty flavour complements the smoky chorizo beautifully.
