Ingredients

For the deep-fried cod

  • vegetable oil, for deep-frying
  • 2 x 200g/7oz thick cod fillets
  • 100g/3½oz panko breadcrumbs
  • 3 tbsp sesame seeds
  • 2 bok choi, thickly sliced
  • salt

For the batter

  • 100g/3½oz plain flour
  • 20g/¾oz cornflour
  • 1 tbsp garlic powder
  • 200ml/7fl oz–225ml/8fl oz sparkling water

For the sauce

  • 1 large orange, halved
  • 1 tsp minced fresh root ginger
  • 1 garlic clove, peeled and minced
  • 1 tsp honey
  • 1 tbsp soy sauce
  • 1 tsp white wine vinegar
  • 2 tsp sesame oil
  • 1 tbsp cornflour
  • salt and freshly ground black pepper
