Ingredients
For the Kipper Hash
- Floury potatoes 4 large
- Olive oil 2 tbsp
- Onion 1, diced
- Garlic clove 1, diced
- Mild curry powder 1 tbsp
- Kippers 4, deboned and chopped
- Spring onions 4, chopped
- Fresh dill 1 bunch, chopped
- Unsalted butter 30g
- Black pepper to taste
To Serve
- Baby spinach 200g
- Streaky bacon 8 rashers
- Eggs 4
Method
Prepare Potatoes
- Preheat oven to 220°C/200°C Fan/Gas 6
- Bake potatoes for 1 hour
- Allow potatoes to cool completely
- Scoop out potato flesh and discard skins
Prepare Hash Mixture
- Heat olive oil in a large sauté pan
- Sweat onions and garlic with curry powder
- Add potato flesh, kippers, spring onions, and dill
- Mix thoroughly
- Season generously with black pepper
- Allow mixture to cool
Cook Hash Patties
- Form mixture into 4 large patties
- Add butter to pan
- Fry patties on medium heat
- Cook for a few minutes on each side until golden
Prepare Accompaniments
- Cook bacon until crispy
- Wilt baby spinach
- Fry eggs
Serve
- Place kipper hash patties on plates
- Arrange wilted spinach alongside
- Add crispy bacon
- Top with fried eggs
- Grind additional black pepper over dish
