Ingredients

For the Kipper Hash

  • Floury potatoes 4 large
  • Olive oil 2 tbsp
  • Onion 1, diced
  • Garlic clove 1, diced
  • Mild curry powder 1 tbsp
  • Kippers 4, deboned and chopped
  • Spring onions 4, chopped
  • Fresh dill 1 bunch, chopped
  • Unsalted butter 30g
  • Black pepper to taste

To Serve

  • Baby spinach 200g
  • Streaky bacon 8 rashers
  • Eggs 4

Method

Prepare Potatoes

  • Preheat oven to 220°C/200°C Fan/Gas 6
  • Bake potatoes for 1 hour
  • Allow potatoes to cool completely
  • Scoop out potato flesh and discard skins

Prepare Hash Mixture

  • Heat olive oil in a large sauté pan
  • Sweat onions and garlic with curry powder
  • Add potato flesh, kippers, spring onions, and dill
  • Mix thoroughly
  • Season generously with black pepper
  • Allow mixture to cool

Cook Hash Patties

  • Form mixture into 4 large patties
  • Add butter to pan
  • Fry patties on medium heat
  • Cook for a few minutes on each side until golden

Prepare Accompaniments

  • Cook bacon until crispy
  • Wilt baby spinach
  • Fry eggs

Serve

  • Place kipper hash patties on plates
  • Arrange wilted spinach alongside
  • Add crispy bacon
  • Top with fried eggs
  • Grind additional black pepper over dish
