Banana cake easy recipe only 4 ingredients

banana bread easy 4 ingredients

This banana cake easy recipe using only 4 ingredients. This banana bread recipe produces a moist, sweet loaf using just ripe bananas, flour, sugar, and baking soda – no eggs, butter, or milk required. It’s an ultra-simple, pantry-friendly way to make delicious banana bread.

Ingredients

  • 400g ripe bananas (about 4 large bananas) (1 lb 12 oz)
  • 250g all-purpose flour (2 cups)
  • 200g granulated white sugar (1 cup)
  • 5g baking soda (1 teaspoon)

Method

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, mash the ripe bananas very well with a fork or potato masher until smooth and pureed, with just a few small lumps remaining. You’ll need about 1 cup (250g) of mashed bananas, which is usually 3-4 medium/large overripe bananas.
  3. Add the eggs (2 large eggs at room temperature) to the mashed bananas and whisk together until fully combined.
  4. Add the granulated white sugar (usually 1/2 to 1 cup or 100-200g) and whisk into the banana-egg mixture until incorporated.
  5. Add the self-rising flour (usually 2 cups or 250-270g) and fold it into the wet ingredients with a spatula or spoon until just combined. Do not overmix.
  6. Pour the banana bread batter into the prepared loaf pan and optionally sprinkle some brown sugar on top.
  7. Bake for 40-60 minutes, until a toothpick inserted in the centre comes out clean.
  8. Allow the banana bread to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

The key points are to mash the ripe bananas very well, whisk together the wet ingredients first, then gently fold in the self-rising flour just until combined. Bake until a toothpick tests clean in the centre.

This banana cake easy recipe uses just four core ingredients – ripe bananas, all-purpose flour, granulated sugar, and baking soda. The ripe bananas provide moisture and flavour, while the flour, sugar, and baking soda are the dry ingredients. Some important notes on the ingredients:

  • Bananas should be very ripe, with lots of brown speckles/spots for maximum flavour and sweetness.
  • All-purpose flour can be substituted with the same amount of plain/cake flour.
  • Granulated white sugar can be substituted with an equal weight of light brown sugar, coconut sugar, etc.
  • Baking soda is used here instead of baking powder to provide leavening without adding dry ingredients.
