Ingredients
For the beef
- 1 x 300g/10½oz sirloin steak, cut into 5mm pieces
- 1 tsp soda
- ½ egg white
- 40ml/1fl oz water
- 1 tsp salt
- ¼ tsp ground black pepper
- 1 tbsp light soy sauce
- 1½ tsp Chinese wine
- 5 tsp potato starch
- 35g/1¼ oz brown sauce, such as OK
- 1 tbsp vegetable oil
For the fried rice
- 300g/10½oz steamed jasmine rice seasoned with salt, chicken powder and garlic oil
- 2 spring onions, green parts sliced into fine rings
- 50g/1¾oz oyster sauce
- 2 free-range eggs, lightly beaten
- 2 tsp sesame oil
- freshly ground black pepper
To serve
- Iceberg or Little Gem lettuce
- handful fresh mint
- handful fresh Thai basil
- handful shiso leaves
- handful perilla leaves
- 50g/1¾oz beef XO sauce

Alternative Ingredients
- Basmati Rice: If you don’t have jasmine rice, basmati rice is an excellent substitute. It has a similar aromatic quality and pairs well with Asian flavors.
- White Rice: Regular white rice (either short-grain or long-grain) can work as a replacement for jasmine rice. It won’t have the same fragrance, but it’s a versatile option
- Wild Rice: For a nuttier and heartier alternative, try using wild rice. It has a distinct flavor and texture that can add depth to your dish1.
Method
- Marinate the beef: Place the beef in a bowl and mix it with all the ingredients except the oil. Cover and let it marinate in the fridge for 3–4 hours.
- Cook the beef: Bring the marinated beef to room temperature. Heat a wok over high heat, add vegetable oil, and stir-fry the beef for 2–3 minutes until fully cooked. Transfer to a plate and set aside.
- Prepare the fried rice: In the same wok or a frying pan, add steamed rice, cooked beef, spring onions, oyster sauce, egg, sesame oil, and black pepper. Cook for 2–3 minutes until the rice is hot and the egg is cooked.
- Serve: Serve the beef fried rice with lettuce leaves and herbs, and have the beef XO sauce on the side.
