  • ½ bunch basil, roughly chopped
  • 250g/9oz brandy mincemeat
  • 20 glacé cherries, chopped
  • 2 sticks crystallised angelica, thinly sliced
  • 1 litre/1¾ pints vanilla ice cream
  • 200ml/7fl oz sugar syrup
  • 200ml/7fl oz dark rum
  • 20cm/8in round vanilla sponge cake, cooled
  • 4 free-range egg whites
  • 400g/14oz caster sugar

For the compôte

  • 200g/7oz fresh cranberries
  • 200g/7oz raspberries
  • 200g/7oz pomegranate seeds
  • 100g/3½oz caster sugar
  • 1 star anise
