Crispy ‘bang bang’ salmon bites with sesame-roasted broccoli

Ingredients

For the broccoli:

  • Broccoli: 1 head, cut into florets
  • Sesame oil: 2 tbsp
  • Soy sauce: 1 tbsp
  • Honey: 1 tbsp
  • Toasted sesame seeds: 1 tsp

For the ‘bang bang’ sauce:

  • Sriracha: 100ml/3½fl oz
  • Sweet chilli sauce: 2 tbsp
  • Honey: 1 tbsp
  • Natural yogurt: 100ml/3½fl oz

For the salmon bites:

  • Plain flour: 50g/1¾oz
  • Paprika: 1 tsp
  • Garlic granules: 1 tsp
  • Ground ginger: 1 tsp
  • Free-range eggs: 2, lightly beaten
  • Panko breadcrumbs: 150g/5½oz
  • Salmon fillets: 2 (150g/5½oz each), skin removed
  • Salt and freshly ground black pepper: to taste

To serve (optional):

  • Toasted sesame seeds: 1 tbsp
  • Sticky rice: 250g/9oz
  • Spring onions: 4, sliced
  • Red chilli: 1, sliced

Method

For the broccoli:

  1. Preheat the oven to 220C/200C Fan/Gas 7.
  2. Place the broccoli florets in a roasting tin.
  3. Pour the sesame oil, soy sauce, and honey over the florets.
  4. Roast in the oven for 15 minutes.

For the ‘bang bang’ sauce:

  1. Combine all the sauce ingredients in a bowl.
  2. Mix well and set aside.

For the salmon bites:

  1. Arrange three dishes on your work surface.
    • In the first dish, mix the flour, paprika, garlic granules, ground ginger, salt, and pepper.
    • Place the beaten eggs in the second dish.
    • Put the panko breadcrumbs in the third dish.
  2. Cut the salmon fillets into bite-sized pieces.
  3. Coat each salmon piece in the seasoned flour, then dip into the beaten eggs, and finally coat with breadcrumbs.
  4. Heat a generous amount of oil in a large frying pan over medium-high heat, ensuring the oil comes halfway up the sides of the salmon pieces.
  5. Once the oil is hot, shallow-fry the salmon pieces until golden and crisp all over.
  6. Remove the cooked salmon from the pan and place on a plate lined with kitchen paper to blot excess oil.

To serve:

  1. Serve the crispy salmon bites with sticky rice and drizzle plenty of bang bang sauce over them.
  2. Garnish with sesame seeds, sliced spring onions, and red chilli if desired.
  3. Serve the remaining bang bang sauce on the side.
  4. Enjoy the salmon bites alongside the roasted broccoli, sprinkled with sesame seeds.
