Method
For the broccoli:
- Preheat the oven to 220C/200C Fan/Gas 7.
- Place the broccoli florets in a roasting tin.
- Pour the sesame oil, soy sauce, and honey over the florets.
- Roast in the oven for 15 minutes.
For the ‘bang bang’ sauce:
- Combine all the sauce ingredients in a bowl.
- Mix well and set aside.
For the salmon bites:
- Arrange three dishes on your work surface.
- In the first dish, mix the flour, paprika, garlic granules, ground ginger, salt, and pepper.
- Place the beaten eggs in the second dish.
- Put the panko breadcrumbs in the third dish.
- Cut the salmon fillets into bite-sized pieces.
- Coat each salmon piece in the seasoned flour, then dip into the beaten eggs, and finally coat with breadcrumbs.
- Heat a generous amount of oil in a large frying pan over medium-high heat, ensuring the oil comes halfway up the sides of the salmon pieces.
- Once the oil is hot, shallow-fry the salmon pieces until golden and crisp all over.
- Remove the cooked salmon from the pan and place on a plate lined with kitchen paper to blot excess oil.
To serve:
- Serve the crispy salmon bites with sticky rice and drizzle plenty of bang bang sauce over them.
- Garnish with sesame seeds, sliced spring onions, and red chilli if desired.
- Serve the remaining bang bang sauce on the side.
- Enjoy the salmon bites alongside the roasted broccoli, sprinkled with sesame seeds.
