- chicken stock 750ml, hot
- frozen peas 100g

- Prepare the chicken and chorizo
Heat the deep frying pan over a high heat and add the olive oil. Add the chicken pieces and brown them on all sides. Do not cook the chicken through at this stage—just achieve a golden colour. Use a wooden spoon to turn the pieces, then transfer the chicken to a plate once browned. - Create the flavour base
Reduce the heat to low. Add the chopped onion to the same pan and cook gently for about 10 minutes, stirring occasionally, until the onion softens and turns translucent.
