  • Gnocchi: 500g
  • Mixed red, yellow and baby peppers: 500g, roughly chopped
  • Cherry tomatoes: 200g, halved
  • Olive oil: 2 tbsp
  • Bay leaves: 2
  • Garlic: 2 cloves
  • Chilli flakes: 1 tsp
  • Fresh rosemary: 2 large sprigs
  • Sea salt: 1 tsp
  • Freshly ground black pepper: to taste
  • Ricotta: 4 tbsp
  • Freshly chopped parsley: a handful

Method

Prepare the gnocchi

  • Preheat the oven to 200°C fan/220°C/ gas 7.
  • Place gnocchi in a large bowl and pour boiling water over it.
  • Let stand for 2 minutes, then drain well.

Assemble and roast

  • In a roasting tin, combine gnocchi with all ingredients except ricotta.
  • Mix well, ensuring everything is in a single layer.
  • Roast for 30 minutes until gnocchi is crisp and golden.

Finish and serve

  • Taste and adjust seasoning with salt and pepper.
  • Dollop ricotta on top and scatter with chopped parsley.
  • Serve hot.
