  • Cold water 3 tablespoons

  • Unsmoked streaky bacon 175g, rinds removed, cut into strips

  • Gruyère cheese 125g, grated
  • Eggs 2 large
  • Single cream 250ml
  • Salt and pepper to taste

Method

Prepare Pastry

  • Mix flour and margarine/butter until it resembles fine breadcrumbs
  • Add cold water to form a pastry ball
  • Roll out and line a 20cm loose-bottomed flan tin
  • Chill in refrigerator for 30 minutes

Blind Bake

  • Preheat oven to 220°C/fan 200°C
  • Blind bake pastry for 15 minutes
  • Reduce oven temperature to 180°C/fan 160°C

Prepare Filling

  • Crisp bacon in sauté pan for 10 minutes
  • Cook onions until golden
  • Add bacon and onions to pastry case
  • Sprinkle grated cheese over

Bake

  • Whisk eggs, cream, salt, and pepper
  • Pour mixture over filling
  • Bake for 25-30 minutes until golden and just set
